The Chardonnay is a delicious wine is made by applying many winemaking techniques in order to create a complex wine. Grapes are picked in the cool of the early morning to retain freshness. They are then gently crushed and the whole bunch pressing of the juice takes place. The juice is then transferred directly to French oak barrels for cool fermentation to begin.

The colour of the Chardonnay is bright yet pale yellow with green hues. It has a delicate ethereal notes of citrus blossom, honeysuckle and peach, these are combined with undertones of crème caramel and vanilla for a complex but fragrant bouquet.

The  Sauvignon Blanc is sourced from their Mount Barrow vineyard high in the hills of Mount Barker in the Great Southern, the block sits at an altitude of 310 – 340m with a south facing aspect.

The MadFish Shiraz draws upon fruit from ideal growing locations in Western Australia and shows the South Western version of the grape in a classic, juicy style – luscious, plush fruit with exotic and savoury spice notes; downright delicious

Chardonnay –

This is a wine of subtlety, complexity, flavour, balance and engagement. Made in a fuller, more upfront style, it has obvious oak influence, to support a solid core of fruit, rounded out by a creamy textural undertone, lending the wine weight and length.

Sauvignon Blanc

The 2020 MadFish  Sauvignon Blanc boasts an aroma of stewed apples, lemon blossom and herbaceous thyme. This is accompanied by a generous palate of nectarine or white peach, giving way to mouth-watering lemon curd with hints of more tropical grapefruit and pineapple. These generous flavours linger before a refreshing dry finish and a subtle flinty minerality.
